Olive Garden Granita-style Italian Iced Maraschino Recipe


Ingredients
  • 4 tablespoons Grenadine (or Cherry Juice)
  • 4 tablespoons Vodka
  • 4 tablespoons DiSaronno Amaretto
  • 4 tablespoons Kahlua
  • 1/2 cup Half & Half
  • 1/2 cup Cranberry Juice
  • Ice (as needed)
  • Cherries

Directions

  1. ADD all ingredients into a mixing tin (in order listed). Add ice and shake.
  2. SHAVE or crush ice in a blender, then place into your favorite cocktail glasses.
  3. STRAIN chilled cocktail mixture over ice.
  4. GARNISH with a cherry.

Olive Garden's Capellini Pomodoro Recipe

Ingredients

3 cloves Garlic, mince
2 pounds Plum tomatoes; seeded, diced
1 ounce Fresh basil leaves, minced
1/3 cup Extra virgin olive oil
3 ounces Parmesan cheese
12 ounces dry Angel Hair Pasta, cooked
1/4 teaspoon Pepper

Directions

1. Heat olive oil and add garlic; cook until it turns white.
2. Add tomatoes and pepper and heat through, stirring constantly, about 2 to 3 minutes. Tomatoes should not lose their shape. Remove from heat.
3. Transfer hot, cooked pasta to large bowl.
4. Toss pasta gently with tomato mixture, basil and half of Parmesan cheese.

Serve immediately and pass remaining Parmesan.

Olive Garden Stuffed Chicken Marsala Recipe

Ingredients

Cheese Stuffing

  • 1/2 cup smoked shredded Cheese (Provolone or Gouda)
  • 8-ounce package Mozzarella Cheese, shredded
  • 1/4 cup Parmesan Cheese, grated
  • 1/2 cup Breadcrumbs
  • 1 teaspoon fresh Garlic, minced
  • 1/4 teaspoon Red Pepper Flakes, crushed
  • 2 tablespoon Sun-Dried Tomato Flakes (drain first if in oil)
  • 1/3 cup Green Onions, thinly sliced
  • 3/4 cup Sour Cream (6 ounces)
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Sauce

  • 1 small Onion, cut in half and thinly sliced lengthwise
  • 24 fluid ounces Marsala Wine
  • 8 fluid ounces Heavy Cream
  • 2 small containers Button Mushrooms, thinly sliced (6 cups)
  • Salt and Pepper to taste
  • 2 pounds skinless, boneless Chicken Breasts
  • 4 fluid ounces Olive Oil
  • 2 cups All-Purpose Flour

Directions

  1. Pre-heat oven to 350°F.
  2. COMBINE all cheese stuffing ingredients in a mixing bowl.
  3. BUTTERFLY thickest section of chicken breasts to create 2 lobes. Pound each breast between 2 sheets of plastic wrap until ¼” - ½” thick.
  4. PLACE flattened chicken breasts on a plate and place desired amount of stuffing on one lobe of each chicken breast. Gently press stuffing down so it resembles a hockey puck.
  5. FOLD over other lobe of chicken breast; does not have to seal.
  6. HEAT large sauté pan over medium heat.
  7. ADD olive oil and heat until shimmering.
  8. PLACE flour in a shallow pan and season to taste with salt and pepper.
  9. DREDGE stuffed chicken breasts in flour, shaking off excess.
  10. SAUTE chicken breasts with preheated oil, cooking until each side is golden brown.
  11. REMOVE chicken from pan and place in a baking dish.
  12. BAKE for 10-20 minutes, or until juices run clean and center of chicken reaches 165°F.
  13. ADD onions to sauté pan, and stir to loosen chicken drippings. After 2 minutes, add mushrooms and sauté until onions are translucent.
  14. DEGLAZE pan with Marsala wine – make sure to incorporate drippings from bottom of pan.
  15. HEAT wine to a simmer and add heavy cream. Simmer on low heat until reduced by half.
  16. PLACE cooked chicken breasts on a plate and top each with onions, mushrooms and sauce.
  17. SERVE with your favorite garlic mashed potato recipe.

Olive Garden's Garlic Alfredo Sauce Recipe

Ingredients
  • 1/2 cup Butter
  • 2 tablespoons Cream Cheese
  • 1 pint Heavy Cream
  • 1 to 2 teaspoons Garlic Powder (start with 1 and taste)
  • Salt
  • Freshly ground Black Pepper
  • 2/3 cup fresh grated Parmesan or Romano Cheese
Directions
  1. In a medium to large saucepan melt the butter over medium heat.
  2. Add the cream cheese and whisk to smooth and melted.
  3. Whisk in the heavy cream.
  4. Season with the garlic powder, salt and pepper.
  5. Bring to a good simmer and whisk frequently until sauce thickens, around 25 minutes.
  6. Remove from heat and stir in cheese.
  7. Taste and adjust seasonings.

Olive Garden Shrimp and Asparagus Risotto


Learn to prepare risotto, a staple pasta dish enjoyed throughout Italy, with Olive Garden's Executive Chef Paolo Lafata. This particular dish was created at our Culinary Institute of Tuscany and takes its inspiration from the Italian coast. Made with carnaroli rice, large sautéed shrimp and fresh asparagus, it's a comfort meal with a twist your family is sure to love!

Olive Garden's Shrimp & Asparagus Risotto

Ingredients
  • 8 cups chicken broth
  • 2 Tbsp extra virgin olive oil
  • 2 cups Carnaroli or Arborio rice
  • 1/2 cup dry white wine
  • 1/2 lb fresh asparagus spears, stemmed and cut into 1-inch pieces
  • 1 1/2 lbs large shrimp, shelled and deveined
  • 4 oz butter
  • 1/2 cup Parmesan cheese
  • Salt and pepper to taste
  • 1 cup chopped tomatoes
  • Fresh parsley, chopped
  • 1/2 cup yellow onion, diced
Directions

SIMMER chicken broth in a large pot on low heat until needed.

HEAT oil in a large nonstick pan over medium heat. Add onions and cook for 3 minutes, or until translucent. Stir in rice and cook for 1 minute, then add white wine. Add 1/2 cup of broth and stir until completely absorbed. Repeat until half of broth has been added. Stir the risotto frequently to prevent sticking.

ADD asparagus and shrimp to the remaining broth and cook for about 2 minutes, or until shrimp are pink. Remove asparagus and shrimp from broth and add them to the risotto mixture. Add remaining broth 1/2 cup at a time until desired creaminess is reached (there may be broth left over).
Once the broth is absorbed, add butter, Parmesan cheese and salt and pepper to taste. Garnish with chopped tomatoes and parsley.

Olive Garden Tuscan Garlic Chicken Home Recipe


Olive Garden Executive Chef, Paolo Lafata, shared this recipe of how to prepare one of Olive Garden's most popular dishes. Inspired by recipes from the heart of Tuscany, the dish features herb-seasoned chicken breasts sautéed with oven-roasted garlic, sweet roasted red peppers and spinach. It is finished with a white wine and garlic cream sauce and tossed with curly fettuccine, known as eleiche or mafaldina in Italian.

Ingredients

  • 4 each (4 oz) boneless, skinless Chicken Breasts
  • 1 1/2 cups Flour, plus 1 tablespoon
  • 1 tablespoon Salt
  • 2 teaspoons Black Pepper
  • 2 teaspoons Italian Seasoning
  • 1 pound Fettuccine Pasta, cooked according to package directions
  • 5 tablespoons Olive Oil
  • 1 tablespoons Garlic, chopped
  • 1 Red Pepper, julienne cut
  • 1/2 cup White Wine
  • 1/2 pound Whole Leaf Spinach, stemmed
  • 2 cups Heavy Cream
  • 1 cups Parmesan Cheese, grated

Directions

Pre-heat oven to 350ºF.

MIX 1½ cups flour, salt, pepper and Italian seasoning in a shallow dish. Dredge chicken in the mixture, shaking off any excess.

HEAT 3 Tbsp oil in a large skillet. Cook chicken breasts 2 at a time over medium-high heat until golden brown and crisp (2-3 min). Add more oil for each batch as necessary.

PLACE cooked chicken breasts on a baking sheet and transfer to preheated oven. Cook for 10-15 minutes or until internal temperature reaches 165°F.

HEAT 2 Tbsp oil in a sauce pan. Add garlic and red pepper and cook for approximately 1 minute. Stir in 1 Tbsp flour, wine, spinach and cream and bring to a boil. Sauce is done when spinach becomes wilted. Complete by stirring in parmesan cheese.

COAT cooked, drained pasta with sauce, then top with chicken and remaining sauce. Garnish with extra Parmesan cheese.

Olive Garden’s Marsala Chicken Restaurant Recipe


Ingredients:

    4 Chicken Breasts, boneless & skinless
    1/2 cup Flour
    Salt & Pepper to taste
    Dried Oregano to taste
    4 Tablespoons Oil
    4 Tablespoons butter or margarine
    2 cups fresh Mushrooms, sliced
    1 cup Marsala Wine

Directions:

1. Pound chicken breasts between sheets of plastic wrap to about 1/4 inch thickness.

2. Combine flour, salt, pepper and oregano in a mixing bowl. Dredge chicken pieces in the flour, shaking off any excess.

3. Heat oil and butter in a skillet over medium heat. Cook chicken breasts on medium heat for about 2 minutes on the first side, until lightly browned. Turn breasts over to cook other side, then add mushrooms to skillet. Cook breasts about 2 more minutes, until both sides are lightly browned. Continue to stir mushrooms. Add Marsala wine around chicken pieces.

4. Cover and simmer for about 15 minutes.

5. Serve over pasta.

Olive Garden Zuppa Toscana Recipe


Ingredients
  • 1 pound Italian Sausage (I like spicy sausage)
  • 2 large Russet Baking Potatoes, sliced in half, and then in 1/4 inch slices
  • 1 large Onions, chopped
  • 1/4 cup Bacon
  • 2 Garlic Cloves, minced
  • 2 cups Kale or 2 cups Swiss Chard, chopped
  • 2 (8 ounce) cans Chicken Broth
  • 1 quart Water
  • 1 cup Heavy Cream

Directions

  1. Chop or slice uncooked sausage into small pieces.
  2. Brown sausage in your soup pot.
  3. Add chicken broth and water to pot and stir.
  4. Place onions, potatoes, and garlic in a separate pot.
  5. Cook on medium heat until potatoes are done.
  6. Add sausage and bacon.
  7. Salt and pepper to taste.
  8. Simmer for another 10 minutes.
  9. Turn to low heat.
  10. Add kale and cream.
  11. Heat through and serve.
